La Tourangelle handcrafts this Roasted Hazelnut Oil in Saumur, located in the Loire Valley of France, strictly following 150-year-old traditional methods.
The process of extracting the oil has not changed for centuries. First, the hazelnuts are ground and roasted in cast-iron kettles to perfection. The resulting warm paste is then expeller-pressed in a hydraulic press. Following mechanical extraction, the oil is lightly filtered and bottled. The leftover cake is sold as cattlefeed or for use in bakeries.
Roasted Nut Oils or Refined Nut Oils?
La Tourangelle artisan oils are roasted nut oils that go through traditional labour intensive oil mill to best preserve the full flavour and nutrients of the nuts. It should not be confused with ordinary refined nut oils available in the market for cheaper prices.
Refined nut oils are often made from sub-standard nut oil stock by expeller-pressed in a screw press and then refined to clean impurities. The result is 100% pure nut oil but with no flavour, no colour and no smell.
